Me & Mine May

May has been full on but not necessarily all good this month. Work has kicked up a notch with the return of my 5 day week for the next few months, it's surprising how having the extra day home can make things easier and I will definitely appreciate it when I'm back to 4 days.
Luke got hit by a dose of hand foot and mouth, the poor thing. He had a nasty rash on his legs and hands and on his tongue, the drooling was ferocious and he was so off form. Thankfully he's over the worst now though, I hate seeing him so ill.
I pulled a muscle in my neck...again. It's a bit of a regular occurence for me now and I really need to go and do something further about it but I kind of forget about it until the next time it goes on me. This time it was very painful, resulted in a trip to the emergency doctor and some painkillers.
On a brighter note though we have put some great effort into the garden this month, new fence, flower bed with plants, the plant pots out the front have been refilled with some colourful begonias. I like looking out the back door now and seeing all our efforts and this is coming from someone who hates gardening!
I've had a bit of a baking frenzy this month too, I've made a few different kinds of cupcakes as well as a lemon curd loaf and marble cake. I'll be sharing some recipes here over the next few weeks.

Our pictures this month were taken after an impromtu trip to McDonalds on a day when naptime wouldn't happen because Luke was being stubborn even though he was tired, I was tired, the weather was sunny one minute and raining the next so we couldn't even make a plan to go out and about so we thought ah feck it the let's head to Maccy D's for a treat (oh, the shame, bad parents!! hehe)

Rose Cupcakes

Using my old reliable sponge mix I made some delicious rose flavoured and jam filled cupcakes at the weekend, they were so yummy.

My usual base ingredients:

6oz Self Raising Flour
6oz Caster Sugar
6oz Cooking Butter
3 Eggs
Rose Flavouring
Pink Food Colouring
Strawberry Jam


  • Cream the sugar and butter together
  • Sift flour and add a bit at a time alternating with the eggs
  • Leave to whir around in the food mixer for a few minutes while you prepare your cupcake tins
  • Add half a teaspoon of rose flavouring, be careful not to add too much as it's quite a strong flavour and I find it can taste quite soapy if you use too much.
  • Split the mixture in half and add the food colouring to one portion
  • Add a bit of each mixture (pink and white) into the cupcake tins
  • Beat some jam in a separate bowl until runny and then ad approx a tsp into each cupcake case
  • Get a cocktail stick and swirl the mixture and jam together ensure theres no lumps of jam left
  • Bake for approx 20-25mins
  • I topped mine with pink coloured butter cream icing and some delicious Eton Mess bits from Dr Oetker
They were quite tasty and slight variation on my usual cupcakes, they went down a treat with my sister and niece who wanted to eat them all!

Yes - The Way Forward

I'm voting Yes To Equality on May 22nd 2015.

I look forward to raising my child in an environment that respects equality, where discrimination doesn't ruin so many lives, where doing what makes them happy isn't questioned. I want them to live in a world where they know that everybody is a unique individual but also an equal.

I look forward to my child falling in love for the first time, feeling that overwhelming, glorious sense of nothing else matters in the world except for this other person.

I may not look forward to the first crushing heart break but when that happens, as always, I will be there for my child to help them through.

I look forward to the day I see my child grow up and find someone they want to share the rest of their lives with.

I look forward to the day where I will be bursting with pride watching my child marry that person they have chosen to be their partner for life.

I look forward to the day I see my child become a parent, where I get to be a grandparent, helping my child and their partner along that road of parenthood, just like my parents are helping me.

I look forward to all of this whether my son falls in love with a man or a woman, the sex of that person is irrelevant to me. What is relevant to me is my son's happiness and by voting Yes on May 22nd 2015, I am doing my bit to ensure that the future ahead of him is a fair one, one where equality is recognised.

For me it's simple, Yes is the way forward.

The A-Z Of Me

Thanks to the lovely My Little Babog for the tag in the A-Z of Me, I love reading and writing these kind of posts!

Here we go:

A - I can't eat Apples with the skin on, they have to peeled, cored and cut up into pieces
B - I always said if I was going to have a baby, I'd love just one and to have a Boy..and I have him :)
C - I don't like Cats, except for my mother's cat, Socks
D - I Dye my own hair all of the time, well my mother does and it's been all different colours
E - One of my middle names is Emma
F - I very briefly owned a 1986 Ford Falcon
G - I have a pink Guitar and started playing when I was 11, not in front of many people though because I was way too shy
H - I've owned 3 Honda Civic's, one hatchback and 2 coupes, they were the loud boy racer type ones too!
I - I moved to Ireland when I was 6, before that we used to holiday here every year.
J - Jimmy Eat World, my favourite band
K - Katie, my 12 year old niece and also my best buddy who's company I cold never tire of, she always brightens up my day
L - Obviously this one is for Luke, the fabulous almost 2 year old that belongs to me. My world.
M - Make up, I really don't feel like I can tackle the world without my eyebrows and eyeliner on
N - Nits or lice or ticks whatever you want to call them, they always remind me of my time in Australia when I walked out of my room to see my 2 hippy housemates, who spent most of their time naked or on acid or both, picking nits out of the guys dreadlocks. An image forever engrained in my memory!
O - Omega 3, I take one everyday along with Vitamin B6
P - I have my tongue Pierced
Q - Queenstown aka Cobh, my hometown
R - Red is my favourite colour
S - I fractured my Spine in a car accident when I was 20
T - I got my first Tattoo on my 18th birthday and now have 8, the most recent one taking 9 hours to do
U - Underground, the Tube in London, the Metro in France, any kind of transport underground like this really freaks me out
V - Victoria Frances and Luis Royo are 2 of my favourite artists
W - I can't imagine never living by the sea, I love being surrounded by Water
X - X-ray, yeah I've had a few of those. (X is a really tough letter!)
Y - Vote Yes. Simples
Z - I've never been to Dublin Zoo but I want to go (Z is also a tough letter!)

Me & Mine April

What a whirlwind of a month April was! It completely slipped my mind to post yesterday but better late than never eh?!
We had our Easter celebrations at the beginning of the month. As always this included a couple of Easter egg hunts. We went to our first one in Fota Gardens, it was an Alice in Wonderland themed one and really good. We went along with some friends and Luke walked for most of it, I thought he might get tired and need his buggy but we didn't bring it and he was fine. The other one was in my parents, as it is every year. My Dad hides all the eggs and treats and Luke and his 3 cousins go off and find them. Of course Luke had a helping hand from his Dad! There is still Easter eggs on the kitchen table so I will more than likely turn them into rice krispie cakes soon.
April also saw us celebrating my niece, Katie's, confirmation day. We had a wonderful time, I did her hair for that morning and she was all decked out in her new dress. There was a party in my parents that afternoon with lots of cake and a bouncy castle, it was a bit windy but a great day. The best part was giving her the One Direction tickets we had all got for her as a present. She was delighted and I'm taking her in October, she hasn't stopped talking about it since!
As I posted yesterday we were also at the first ever Irish Parenting Blog Awards in Dublin. It was a great weekend away, a bit of us time for me and the OH and an opportunity to meet some of my fellow bloggers. I'm looking forward to next years event already!
April also sees the end of my 4 day week at work for the time being. From May onwards I am back to 5 days a week. I'm trying not to think about it too much because I hate the extra ay away form Luke but hopefully I will be so busy the time will fly.

I can't get how grown up Luke looks in this month's pictures, his personality is shining through in these pictures and he's becoming such an independent little guy who's now repeating everything we say. He's such a little charmer and knows exactly when to flash that cheeky grin of his.
